Banana Bread Muffins
It’s a nice low-sugar recipe and it’s easy enough to get my 4 year old to help combine the ingredients
2 cups self-raising flour
1 tsp ground cinnamon
1/2 tsp bicarbonate of soda
1 cup rolled oats
1/2 cup brown sugar
3/4 cup plain yoghurt
1/4 cup vegetable oil
2 mashed bananas.
1/2 cup dried fruit/sultanas
Preheat oven to 200°C.
Sift flour, cinnamon and soda into a bowl.
Add oats and brown sugar and stir to combine.
Beat eggs, yoghurt and oil together.
Add banana and stir to combine.
Combine wet and dry ingredients.
Spoon mixture into muffin tray (line or greased as required)
Bake for 20 minutes or until golden and cooked through.
