Banana carrot and date cake

Banana, Carrot and date cake

You will need

3/4 cup sugar
125ml olive/vegetable oil
2 eggs
1 medium banana (mashed)
1 medium Carrot (grated)
Handful of dates (roughly chopped)
60 ml milk
2 cups s/r flour
1/2 teaspoon baking powder
1/2 teaspoon cinnamon

Directions

*Use a food processor to make the carrot “disappear” into the batter for sneaking some extra veggies into a picky child, or a hand held blender for a textured cake.

Step 1.Combine sugar and oil.

Step 2. Add eggs one at a time, whisk together until smooth.

Step 3. Add Carrot, dates and banana. Mix.

Step 4. Sift in flour, baking powder, cinnamon, add milk and mix.
