We love honey in this house! It’s part of our weekly staples and we have it on cereal, toast, yogurt, pancakes and tea – it even gets eaten from the spoon. So it’s no wonder that these super easy Honey Cakes were a hit in our house!
Easy Honey Cupcake
1/2 cup honey
1/2 cup sugar
1/2 cup softened butter or margarine
1/2 cup milk
1 3/4 cup of SR flour
1/4 cup honey
1/4 cup soften butter or margarine
For the Easy Honey Cupcake
Preheat the oven to 180 deg.
Combine the honey, butter, milk and sugar in a mixing bowl with a beater. Don’t worry if the mixture curdles at this point, it will be fine. Once blended add the flour and continue to beat mixture for a couple of minutes until it’s smooth.
Spoon the mixture into cupcake cases and bake in the over for approximately 20 minutes (check after 15 minutes).
Allow cupcakes to cool before icing.
For the icing
Mix honey and butter together until smooth and spread over cupcakes – use sparingly as it is very sweet.
