Gingerbread Christmas Cookies

Gingerbread Christmas Cookies

Ingredients:

Gingerbread Cookies

150 grams butter
1/2 cup firm packed brown sugar
1/2 cup honey
1 tablespoons of ground ginger
1 teaspoon of mixed spice
1 egg
3 cups self raising flour

Step 1 :  In a saucepan melt butter, sugar and honey together, bring to boil, transfer into a large heatproof bowl.

Step 2 : When completely cooled add, ginger, mixed spice and egg and mix through.

Step 3 : Sift in 3 cups of flour and combine.

Step 4 :  Knead and roll out dough approximately 1cm thick (may need to do this in 2 lots) on a well floured bench/board.

Step 5 : Cut out shapes – I did a combination of gingerbread men, Christmas trees, stars, angels and hearts. (Re-roll out dough until it’s all been used.)

Step 6 : Space out on a greased tray approximately a finger width apart and bake at 180 for 10 minutes or until firm and your men have a nice deep tan.

Step 7 : Decorated with butter cream icing and sprinkles on the trees or you can leave them plain.

I was a little nervous baking this for my birthday because I pretty much just blended together two different recipes with absolutely no experience making either of them.
