White Chocolate Hedgehog

White Chocolate Hedgehog

These are a seasonal twist on an old favourite and make a good homemade gift for teachers, friends or family at Christmas time.

Ingredients
250 gram packet of plain sweet bickies (I’ve used milk arrowroot)
125 grams butter (block not spreadable)
1 tin sweetened condensed milk
1/4 cup cocoa powder
1/4 cup desiccated coconut

White chocolate “icing”
375Grams white chocolate
1/4 cup pistachio
1/4 cup dried cranberries

Top Deck Christmas HodgeStep 1 : Break up biscuits into a tray. Melt butter in a small pot, add sweetened condensed milk and cocoa to the butter and mix until fully combined. Pour over biscuits, add coconut, mix and press down firmly in tray.

Step 2 : Allow to set for 30mins in the fridge or until firm to touch. Roughly chop pistachios and cranberries. Melt white chocolate (in a double boiler). Mix pistachio and cranberries into the white chocolate and pour over hedgehog and smooth down.

Step 3 : Allow to set for several hours or overnight. Chocolate will crack a little when cut into pieces – or slice while semi-hardened after 10 minutes or so and cut again when completely set.
